While the always clean and neat kitchen counter should be used for the preparation of the finest meals, with nothing out of place, including your heart, with nothing stacked upon the flat surface, when lying out a cutting board means moving it from its place and being flat against the surface, and the knife so quickly and briskly cutting through the vegetable or meat to be prepared for dinner, it is an amazing thing.
But, you get you some of Rodney's tomatoes: big firm, roundy-round, with spiked tops and insides that all cut with a quick grab of the kitchen knife, and you've got to figure some of those cucumbers that fit in that plastic bowl have laid there long enough, and you look up and the mornings grab of FRESH okra (not including the one you ate straight from the plant) are laying there like little sacrificial creatures just waiting to be consumed, and with a quick prayer, and the counter scattered with cutting board(s) and knives and bowls and freshly washed jars ready for boiling and pots ready for cooking, neatness.....is the last thing on your mind.
